The restaurant serves as a sanctuary where 90% of the produce is sourced directly from local farmers' markets, ensuring that every dish remains an authentic expression of nature.
THE PRIMITIVE MAGIC OF FIRE
The ritual at Alto is centered around the ancestral connection to fire. For Chef Esteban, the open flame represents power and magic. Unlike the precision of gas, the fire requires a primitive sensitivity and a patient rhythm. This intentional process is reflected in signature dishes like their charcoal-oiled crudo, where the elemental heat of the kitchen meets the delicate refinement of the table.
DESIGNING THE EXPERIENCE
Every moment at Alto is choreographed to make guests feel both at home and inspired. The creative process is one of deep refinement, beginning with the disparador — the first "shot" of an idea — followed by hand-sketching and collaborative sessions to ensure each dish feels truly "Alto-ish." This attention to detail extends to the service, where the restaurant utilizes the RIM, ALFRESCO, and CERAMIC LAB collections to elevate the final presentation.
